Diners overwhelmingly call out the signature dish as the must-order. The vibe reads as vegan restaurant — service is consistently described as warm and unhurried. Common gotcha: queues form at peak times — go early or late.

Excerpts

I drive over 20 miles just to buy their sourdough bread. It is the best! The marble rye makes wonderful sandwiches, too. Although, while you're there buying bread, you should try one of the fantastic sandwiches they make there. So far I have tried: the turkey club, the muffeletta, and the Cuban sandwich. They all have unique ingredients that take them over the top. The onion jam on the turkey club is a favorite! The Dijon mustard on the Cuban definitely has more of a horseradish kick than you would expect, but it's great. I have not tried their coffee yet, but I have had a chai latte (Hands down the BEST chai latte I've ever had - super rich!) and an absolutely dreamy London Fog. They offer some baked goods as well. The cinnamon rolls were fantastic. But for me, it's really just all about that bread!

The opening of Bricklayer here was bittersweet for me, as I frequented the previous resident, Cornerstone Coffee. However, there is no possible way to be disappointed in having bread like this so close to home. It is simply incredible. It is tender with just the right amount of chewiness, and the crust may be more flavorful than the bread. I have only tried a few of their other offerings. The breakfast quiche I had was served still somewhat cold, so it wasn't my favorite, but the greens with a house made dressing were actually so good, I didn't care about the quiche. I recently tried the pumpkin soup and it was one of the best soups I've ever had. Velvety smooth with a balanced spice to it, and it was garnished with tiny cubes of fresh apple. Unfortunately, the container was only about halfway filled, but the piece of toast drenched in butter helped make up for my sadness in not having more soup to eat. And not to disappoint those those who need gluten free options, the gluten free cheesecake made me question if it was GF, it was that good (and big enough for two people). The coffee and drinks also are high quality, like everything else. Regardless, this is a gem of a place with bread and other food to rival anything in the state and beyond, truly. I'm thankful they opened right here in Troy.
