Diners overwhelmingly call out the signature dish as the must-order. The vibe reads as vegan restaurant — service is consistently described as warm and unhurried. Common gotcha: queues form at peak times — go early or late.

Excerpts

We had just landed at the airport and wanted something local for lunch. We ended up here. They’re in a “backup” location just down and across the street from their main location while it is being renovated. That however did nothing to diminish from a fantastic Tex-Mex meal. Most everything was prepared after we ordered and was very fresh. Their guacamole is excellent and is served with salsa. Agua fresco is made on site - ended up having both the hibiscus and pineapple as we stayed for 90 minutes sitting outside under a shade cover. My main course were three pork tacos - served on corn tortillas made fresh when I ordered (tasty and not dry). My wife had a variety of 3 tacos (beef, pork and shrimp). Because everything else was so good I ordered churros…also fresh and excellent. Nayelli was our wonderful server and the owner, Leo, is a gem of a person who we enjoyed talking with for 30 minutes or more. He learned to cook in Mexico with his grandmother as a child.

Cocina Madrigal had a fire, so now the magic is happening in their food truck with food served in to-go containers in a building nearby or on a patio. The food was amazing! The homemade tortillas for the tacos are THE BEST tortillas I have ever had. I loved the steak salad with mango!! Oh YUM! The place was super busy, and the temporary location makes the atmosphere less than 5, but once the restaurant is fixed from the fire, the atmosphere will be better.

We checked the Google reviews before going, and everything was great except for the slightly out-of-the-way location, which made it a little difficult to find. We ordered three dishes and one drink, and the portions were so generous that we took the leftovers home. The burritos and tacos were absolutely delicious. And the staff were all very friendly, which made for a pleasant experience.
