Diners overwhelmingly call out the signature dish as the must-order. The vibe reads as vegan restaurant — service is consistently described as warm and unhurried. Common gotcha: queues form at peak times — go early or late.

Excerpts

We had such an amazing experience here! I ordered the Ropa Vieja and my spouse had the Sandwich Cubano; both were so, so good. We ended up splitting our meals so we could each enjoy both dishes, and I’m so glad we did because they were different but equally delicious. Our server, Gabriella, was hands down one of the best we’ve ever had. She confidently recommended a dish without hesitation, explained how to properly enjoy my meal when it arrived, and checked on us at just the right times. She was genuinely kind and made the whole experience even better. The atmosphere was unique and absolutely perfect. The music was upbeat at just the right volume, and the decorations and seating were beautiful. Everything felt super welcoming. Eat here!

We stopped at Cuba Cuba in Castle Rock on our way back to Colorado Springs from Greenwood Village, and I’m so glad we did. Everything we ordered was delicious. We started with the yuca frita, really good, though I do wish there was a bit more of the sauce because it was that good. I ordered the Pan Con Lechon, and after my very first bite I literally said, “mmm oh yaaaa… soooo good.” Absolutely delicious. I chose the coleslaw as my side and it’s honestly one of the best coleslaws I’ve had. For drinks, I had the yerba mate soda, which was wonderful, I already love yerba mate, and having it as a soda was perfect. We finished with the bread pudding, and it was exactly what I consider a traditional bread pudding — warm, comforting, and yummy. We were definitely happy we stopped and will absolutely be back the next time we’re in the area.

The food was fantastic! Beautiful interior, authentic taste and vibe. The waitstaff was helpful and friendly. Would highly recommend you check it out. Try the tree leches, best in Denver. The portions are large, plenty to share.
