We had the Eggplant Panini and the Meatless Quesadilla and they were spectacular! The Eggplant Panini was a masterpiece. It was one of the best vegan sandwiches I’ve had. The star was the eggplant – perfectly tender and meaty, coated in a light, crispy panko breading that added amazing texture. It was layered with creamy avocado, fresh tomato, peppery arugula, and a vegan cheddar that actually melted and had great flavor. The garlic and parsley spread on the soft, grilled ciabatta brought everything together with a fragrant, savory note. Every single bite was a perfect balance of crunchy, creamy, fresh, and savory. The Meatless Quesadilla is a flavor powerhouse and an absolute triumph! The Impossible meat is seasoned to perfection—savory, slightly spicy, and with a texture that is honestly indistinguishable from the "real thing." It's beautifully complemented by the sweetness of the roasted red bell peppers and the sharp, melty goodness of the vegan cheese. What a gem! Stopped by the Dark and Light Cafe in town and was thrilled to find tasty vegan options in a small place. I grabbed the yucca balls and the vegan eggplant parmesan sandwich—both were delicious. The atmosphere, service, and overall vibe were spot on. I’d happily recommend this spot to anyone, vegan or not.
