El Dos Mexican Restaurant

We stopped at this restaurant last year as a last resort as the first two restaurants were closed. Boy, were we glad we did. I ordered the vegetable fajitas, and the staff was very accommodating to make it vegan. Which means hold the cheese and hold the sour cream. They were also able to substitute the refried beans for french fries. As the beans are cooked in lard. So, I ordered the vegetable fajitas, and they were absolutely positively delicious! As you can see in the photo, there is a plate full of lettuce, avocado, pico de gallo, Spanish rice, and three tortillas. On the other platter came a sizzling plate full of grilled vegetables. There was broccoli, mushrooms, onions, halved baby carrots, bell peppers, and more. This sizzling, grilled pan of vegetables had a delicious flavor, not bland as most restaurants. I liked this meal so much we stopped by this restaurant on the way back home. And when we had to take a road trip again, we stopped on the way out and we stopped again on the way back. It is about a 5 Hour drive from my house, but I’m already planning on going back. Highly suggestible.

Nice place, food was good and the food came quickly. They weren't busy at all so we got in and out quickly. Ordered beef fajitas, chicken fajitas and taco platter. Tasted really good. Salsa was good, chips pretty good. Not bad for Hays, Kansas! The server wasn't rude but just wasn't very friendly. We would probably return if back in Hays. I would've rated higher but based on some other Mexican restaurants I've visited this was 4 star instead of 5. Thanks!

Veggie fajitas and frozen margarita were very good. The gentleman delivering food to tables looks like he lost his best friend. One could hope for more spark from servers.
