Hummus republic is my go-to for lunch when I'm in the area. I love to get a bowl with couscous, chickpeas, and mushroom shawarma. The mushroom shawarma is soooo good I almost need to start ordering double protein because it's so delicious. I love that you can add plenty of toppings and sauces, and hummus! I've noticed their portion sizes have decreased recently, but it's still plenty of food. Picture below is from a few months ago and since then I've never quite got that same amount, but maybe I just got lucky before. Either way, I'm still coming back. Pop around the corner from the republic to try Story Coffee Bellevue for a nice drink as well :)

I was excited to try this make-your-own style Mediterranean restaurant. I probably had high expectations and this place didn't meet them. We ordered two bowls, the falafel was fresh and tasted satisfactory but the chicken shawarma didn't taste good and felt rubbery. The hummus and dressing offerings made the bowl taste a bit better. We also ordered their pita chips that were made fresh but they were thick, very oily, and lacked taste.
