We had such a beautiful experience at Maiz Cocina last night. The decor is absolutely adorable and thoughtfully done for Valentine's Day the- lighting sets the perfect mood, making the space feel cozy yet elevated at the same time. The atmosphere is welcoming and truly suitable for all age groups, whether you’re there for a date night, a girls’ night, or a family dinner. The food was top of the line in both flavor and presentation.. every dish felt intentional and delicious. And the customer service was just as impressive: attentive, professional, and full of class from start to finish. You can tell they genuinely care about the experience they provide. We'll definitely be coming back and recommending this spot to others ✨

Upscaled versions of traditional Mexican dishes from a variety of locales. It's not a cheap street food vendor, this place has a chef who really thought through these recipes. For example, I got the Chile Colorado (Chihuahua), the first Specialty on the menu. I typically use this dish to determine a Mexican Restaurant's quality. Instead of cheap meat in the sauce, Maiz Cocina uses short rib braised until it shreds in the sauce. Elegant. We also got mole (Puebla) enchiladas. And the kid ordered rack of lamb with mole and it was really good. The cream of Jalapeño soup was worth the trip alone. Beans and rice were flavorful. Tortillas were fresh and HOT. We had one waiter who reminded us of Ricardo Montalbán in a good way running the whole place and bar, and he was excellent for everyone we could tell. We were late for dinner but never rushed. Atmosphere yes. Service Yes! Food YES!!

Maiz Cocina absolutely exceeded my expectations. The chicken mole was perfectly prepared — tender, flavorful, and so rich that it practically melted apart with every bite. The carnitas were equally impressive — juicy, crisp on the edges, and seasoned to perfection. And the steak fajitas? Hands down the best I’ve had in years. The steak was so tender it could be cut with a butter knife, and every bite was bursting with flavor. You can taste the care and craftsmanship in every dish. The presentation was beautiful, the portions were generous, and the entire meal felt like a celebration of authentic Mexican cuisine done right. If you’re anywhere near Corona, do yourself a favor and eat here. Maiz Cocina is the real deal — comfort, flavor, and artistry all in one plate.
