Stopped by the Moon Rock for the first time, a collection of food trucks and was pleasantly surprised to see this unique truck, as I’ve usually only had Thai food in sit down restaurants. The menu was simple, straightforward but boasted the more popular Thai dishes, such as pad Thai, Tom yum, Thai curry and even mango sticky rice! I ordered the chicken pad Thai, tofu was another option as well, crispy pork belly, and fried spring rolls. The pad Thai was so flavorful, the portion was big (a lot could surprisingly fit in the box) and they did not skimp out on the amount of chicken in it. The crispy pork was delicious too as well and my boyfriend destroyed it on his own. It was perfectly crispy, topped with some crispy garlic, and paired well with the slightly spicy dipping sauce they provided with it. The fried spring rolls were extremely hot, but well worth it once cooled off, as they were fat with filling and deliciously crispy and crunchy. The food truck also provided the peanuts, chili powder, crispy garlic on the side of the order window if you want to top any of your dishes with the authentic necessities. They also offered a variety of Asian potato chips, such as basil, Asian bbq, seaweed flavors and more! They also offered ramune, the Japanese marble sodas, for purchase as well, and I could tell they were a huge hit. The owner was extremely friendly and hospitable and I could tell there was passion and love when my food was prepared. You can just taste it. Will definitely be back because I need to try the mango sticky rice next time.

This food truck was at Moon Rock. Great area, chill atmosphere, friendly service and staff. I am originally from Las Vegas and in town for a couple weeks for me. Theres not too many options when it come to fee in Harlingen. So I was very excited to see a Thai food truck as I am thai myself. Great price and delicious food. It was home away from home for me. I will definitely come here again and can't wait to share this with my colleagues. We will be back again soon...
