They clearly put just as much thought and creativity into their vegetable dishes as their meat options. I had a roasted cauliflower steak that was absolutely incredible—charred perfectly, drizzled with a tahini sauce I'm still dreaming about, and topped with pomegranate seeds for a burst of brightness.
