Cute little place near Fort Union. Fast casual. Employees are nice. They recommend things to me when asked. The place is super clean and tidy. Pretty quiet and easy to converse. The tacos are amazing. They allow you to sample things too if you ask. We came here for lunch and it was quick, delicious, and easy.

Cute little place near Fort Union. Fast casual. Employees are nice. They recommend things to me when asked. The place is super clean and tidy. Pretty quiet and easy to converse. The tacos are amazing. They allow you to sample things too if you ask. We came here for lunch and it was quick, delicious, and easy.
I always enjoy small bite cafeterias because everything always looks so bright & colorful, and I can try so many different things without committing to a whole meal. Because commitment issues. Vessel Kitchen has a two locations, and the one in Midvale is large & spacious (great for reducing claustrophobicism but not great for acoustics). Walking past the cafe line lets you see and choose and sample any of the cold/hot sides. Took a lot of internal debating, but finally settled on butternut squash (very yum), brussel sprouts (ok), mac & cheese (very yum) and chickpea soup (very yum). Colorful meal with all of the nutrients for 4x$3 or $12. So much yes. Drinks and pastries also offered at the end. I joked with cashier about how one of the strawberry macaroons looked ugly and squashed. Peep was friendly and she let me take the damaged one for free. Sweet! Water & bussing is self-serve, which is a nice way of saying "stay as long as you'd like".

The food was delicious, and really fresh. It's an "order and then sit" place and then they bring it to your table. Pretty full at noon, but by 1pm it was almost empty. They have protein bowls, salads, taco plates, a la carte sides, etc.
